Ingredients
- Yve’s Chicken Curry Masala (Mild, Hot, X-Hot)
- Yve's Garam Masala (optional for extra flavor)
- 1 kg chicken, cut into pieces
- 1 large onion, finely chopped
- 1 tsp ginger paste
- 1 tsp garlic paste
- 1/2 fresh tomato, finely chopped (or canned tomato)
- Potatoes, optional, cut into cubes
- Salt, to taste
- 3 tbsp oil for cooking
- Coriander leaves for garnish
Instructions
- Preparation: Rinse the chicken pieces under cold water and pat them dry with paper towels. If using potatoes, peel and dice them into cubes.
- Sauté Onion, Ginger & Garlic: Heat 3 tbsp of oil in a large skillet or pot over medium heat. Add the chopped onion and sauté until it turns golden brown. Then, add the ginger paste and garlic paste, and sauté for another minute until fragrant.
- Spice Blend: Sprinkle 3 tbsp of Yve’s Chicken Curry Masala into the pot, stirring well to coat the onions and spices evenly. Allow it to cook for about a minute to release the flavors.
- Add Chicken: Add the chicken pieces to the pot along with salt to taste. Stir well to coat the chicken with the spice mixture. Let the chicken braise for about 15-20 minutes, stirring occasionally, until it starts to brown slightly.
- Incorporate Tomatoes: Add the chopped tomatoes to the pot and cook until they soften and release their juices, helping to form a thick gravy.
- Add Water: Pour in 1 cup of boiled water into the pot to create more sauce and ensure the chicken cooks evenly. Allow the curry to simmer for further cooking.
- Optional Potatoes: If using potatoes, add them to the pot at this stage. Stir well to coat them with the sauce and spices.
- Additional Flavor: For an extra layer of flavor, sprinkle 1 tsp of Yve’s Garam Masala into the pot. Stir to incorporate.
- Simmer: Let the curry simmer gently until the potatoes are tender and the chicken is cooked through, about 15-20 minutes more. Stir occasionally to prevent sticking and ensure even cooking.
- Garnish and Serve: Once the chicken and potatoes are cooked, garnish the curry with fresh coriander leaves. Serve hot with rice or naan bread.
