Recipe
Ingredients
- 3 tbsp Yve's Biryani Masala
- 1 large onion, thinly sliced
- 1 tsp crushed ginger
- 1 tsp crushed garlic
- 1 large tomato, chopped
- 2 cups basmati rice
- Handful of curry leaves
- 1 tsp garam masala
- Meat or vegetables of your choice (chicken, lamb, beef, potatoes, carrots, etc.)
- Salt, to taste
- Oil for cooking
Instructions
- Preparation: Rinse the basmati rice under cold water until the water runs clear. Soak the rice in water for about 30 minutes, then drain.
- Sauté Onions: Heat oil in a large pot over medium heat. Add the sliced onions and curry leaves. Sauté until the onions are golden brown and caramelized.
- Add Ginger and Garlic: Stir in the crushed ginger and garlic, and sauté for another minute until fragrant.
- Spice Blend: Sprinkle the Yve's Biryani Masala into the pot, stirring continuously to toast the spices for about 1-2 minutes.
- Incorporate Tomatoes: Add the chopped tomatoes to the pot and cook until they soften and break down, forming a thick gravy.
- Add Meat or Vegetables: If using meat, add it to the pot now and cook until it's browned on all sides. If using vegetables, add them accordingly and cook until they are slightly tender.
- Cook Rice: Add the soaked and drained rice to the pot. Pour enough water to cover the rice by about an inch. Season with salt to taste. Bring the mixture to a boil, then reduce the heat to low. Cover the pot with a tight-fitting lid and let the biryani simmer for about 15-20 minutes, or until the rice is cooked through and fluffy.
- Final Touches: Once the rice is cooked, sprinkle garam masala over the top of the biryani. Garnish with fresh coriander leaves.
- Serve: Carefully fluff the biryani with a fork, mixing the rice and meat or vegetables together. Serve hot, accompanied by raita or your favorite chutney.
